Trigo Wood Fired Pizza is where local, seasonal ingredients meet the flavor of wood fired cooking. Owner and operator Patrick Griffin first discovered his love for cooking while in college in sunny Santa Barbara, CA, living with his brother Phil on Trigo Road. These days, both brothers have returned to eastern Connecticut and continue their appreciation for fresh, local produce. Phil owns Apis Verdi Farm in Lebanon, Connecticut - Trigo's major supplier, and as you now know, Patrick is opening Willimantic's first harvest-to-hearth pizza restaurant. This adventure was born on Trigo Road and has now landed on Main Street, Willimantic!
